In March, we joined the 1Change campaign organized by The Midcounties Co-operative. Over the course of that month, we collected all our single-use plastics and were shocked by the sheer volume. When we were asked to participate in the second phase of the challenge, we jumped at the chance. This experience truly shifted our mindset and motivated us to minimize our reliance on single-use plastics. This time around, Midcounties has challenged participants to prove that even a short amount of time—just one minute—can make a meaningful impact in reducing single-use plastics. Their initiative encourages individuals to make a quick, impactful change to help combat plastic waste. As someone who had already made a 1Change pledge earlier this year, I felt inspired to take part again. I spent a couple of days brainstorming ideas for this new challenge. At first, I thought about organizing a quick litter pick-up after Halloween, knowing how much trash tends to accumulate. But then, while washing the girls’ lunch boxes, I noticed the overwhelming amount of single-use plastic packaging. It dawned on me that I’d developed some bad habits, like purchasing pre-packaged snacks for their school lunches. While I usually opt for fruits like bananas or apples for their morning snack, I sometimes give in to convenience and buy pre-cut mango or pomegranate slices, which always come wrapped in plastic. On Sunday night, I dedicated just sixty seconds to make a change. I laid out various reusable containers and tasked the kids with helping me fill them within that brief timeframe. They absolutely loved taking part in this activity, and it gave them a sense of ownership over their meals. By the end of the evening, we had prepared enough snacks to last the entire week. In the containers, we placed blueberries, raisins, carrot sticks with hummus, and cherry tomatoes. For other days, we’ll switch it up with harder fruits like pears and apples. Next week, we plan to include grapes and strawberries, along with celery and hummus for variety. Inspired by the kids’ enthusiasm, we also decided to create our own DIY lunchables as an alternative to store-bought versions that come in single-use plastic. Instead of using cheese crackers, I sliced up some whole wheat pita bread. To make it fun, we added bite-sized pieces of cheese and pepperoni. The girls thoroughly enjoyed assembling their mini sandwiches, and they ended up eating far more than usual. We also included cheese biscuits and a small pot of spreadable cheese for extra flavor. To cater to after-school snacking, we prepared a box filled with strips of pita bread, cherry tomatoes, and a little tub of hummus. This will keep them occupied and satisfied until dinner. The best part? We can reuse these containers every week! As a special treat, I even whipped up some breadsticks slathered with chocolate spread. Although delicious, these won’t be going to school due to allergy concerns. While the kids were busy filling their snack containers, I quickly chopped up some potatoes and leeks to whip up a batch of homemade soup for my lunch. I usually rely on store-bought soups, which come in single-use plastic containers, but this time, it took me less than a minute to prepare the ingredients. Once simmering on the stove with some lentils and vegetable broth, the soup practically cooked itself. In just sixty seconds, we managed to significantly cut down on plastic usage while also creating healthier, budget-friendly meals. I loved involving the kids in such a practical way to contribute to a larger cause, even if it's just a small step towards sustainability.
