The Growing Importance of Hygienic Design

Over the past few months, there’s been a growing emphasis on the concept of hygienic design in food safety circles, and it’s encouraging to see so many industry professionals converging on this idea. Ensuring that tools and equipment are designed with hygiene in mind is no longer just an option—it’s becoming a necessity. After all, food safety teams already face enough challenges without having to deal with additional risks from poorly designed cleaning tools. This summer, I had the chance to attend two significant conferences where hygienic design was front and center. First, in March, I joined the 3-A Sanitary Standards Group as they tackled the complex task of setting guidelines for hygienic and sanitary equipment design. As food production becomes increasingly intricate and voluminous, maintaining proper sanitation is more challenging than ever. While 3-A’s current standards focus mainly on large-scale machinery, there’s growing recognition of the need to extend these principles to smaller tools like hand implements. Then, in August, I participated in the International Association of Food Protection (IAFP) annual conference, which has rapidly become one of the most influential gatherings in the field. Just like at the 3-A event, discussions around hygienic design were prominent in various Professional Development Groups and general sessions. One standout moment came when Deb Smith, Vikan’s Global Hygiene Specialist, addressed the Food Sanitation and Hygiene PDG. Her presentation on the scientific approach to designing hygienic cleaning tools was met with enthusiastic feedback from both within and beyond the group. Clearly, the industry is catching on to the critical role hygienic design plays throughout the cleaning process.
