Those tasked with maintaining food safety face an ever-expanding list of challenges, and it’s critical that companies don’t compound these issues by using poorly designed cleaning tools. This summer, I was fortunate enough to observe the ongoing discussions around hygienic design at two distinct industry events. Back in March, the 3-A Sanitary Standards Group addressed the complexities involved in designing hygienic and sanitary equipment. As food production continues to grow in scale and intricacy, keeping up with proper sanitation becomes increasingly difficult. While 3-A standards currently focus mainly on large-scale machinery, the organization acknowledges the potential advantages of extending these guidelines to smaller tools like hand implements. In August, I participated in the International Association of Food Protection (IAFP) annual meeting. The IAFP conference has seen impressive growth in both size and significance over recent years. Similar to the conversations at 3-A, attendees at IAFP were actively discussing hygienic design across various Professional Development Groups and main sessions. Deb Smith, Vikan’s Global Hygiene Specialist, delivered an insightful presentation on the scientific principles behind hygienic design for cleaning tools during the Food Sanitation and Hygiene PDG session. Her talk drew significant attention from participants both within and beyond the group.
